WHOLE WHEAT MIXED BERRY COBBLER

I love anything made with fresh berries and this recipe is so quick and simple to make.

Ingredients:
  • 3 cups of fresh mixed berries
  • 3/4 cup sugar
  • 1/2 cup flour
  • 1/2 whole wheat flour
  • 1/2 cup sugar
  • 2-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 stick of butter, melted + additional for pan
Directions:

Pre-heat oven to 375 degrees

In a small mixing bowl, mix berries and 3/4 cup of sugar and set off to the side.

In another bowl mix flour, whole wheat flour, 1/2 cup sugar, baking powder, and salt.  Stir in milk until smooth.  Stir in melted butter.

Butter a 9 x9 baking dish.  Pour in batter.  Carefully spoon fruit mixture on top of batter.  Do not stir.

Bake for 35 to 40 minutes until lightly browned.

Serve with vanilla ice cream if desired.
