I love the fresh light flavor of this salad with the combination of ingredients. It's light and satisfying and filling at the same time.
Ingredients for salad:
- 1 head heart of romaine, chopped
- 1 cup shredded broccoli slaw mix
- 1 cup coarsely shredded cabbage
- 2 stalks celery, cut on a bias
- 1 carrot, cut into matchstick pieces
- 1/2 red bell pepper sliced into thin strips
- 1/2 cup of edamame, shelled
- 1/2 cup slivered almonds
- 1 small can mandarin oranges in their own juice, drained
- 2 small or 1 large chicken breast, poached and cubed
- Chow mien noodles for topping
Ingredients for dressing:
- 2 cloves garlic, crushed
- 1 tablespoon fresh grated ginger root
- 1/4 cup olive oil
- 2 tablespoons sesame oil
- 3 tablespoons rice vinegar
- 1/4 cup naturally brewed soy sauce
- 1/4 cup honey
- 2 tablespoons water
- 2 tablespoons sesame seeds
Directions for salad:
Combine all ingredients except mandarin oranges, chicken and chow mien noodles and toss together. Place salad mixture on plate and top with remaining ingredients.
Direction for dressing:
Combine all ingredients except sesame seeds. Microwave for 30 seconds and mix with blender. Add sesame seeds and chill before serving.

I really do like the mix of greens that you pulled together in this salad. Also, this household has recently locked on to asian style dressing as a favorite, so I know we would enjoy the one you have listed here. Thanks for sharing.

I really have to make this for my husband. He loves Asian flavors in his salads. I make a lot of Asian dishes but not many salads. I like how you used broccoli slaw in the salad!
