This recipe comes from my friend Sue. She says "It's super simple and you don't have to take anything's temperature". So it sounds like you can't go wrong with this candy recipe.
Ingredients:
- 1 can cashew pieces 9.5 oz.
- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1 tsp. butter
- 1 tsp. vanilla
- 1 tsp. baking soda
In a 2-qt. glass measuring cup, stir together nuts, sugar, and corn syrup. Microwave, uncovered until the mixture is light brown - 6 or 8 min., stirring halfway through. Grease a cookie sheet with butter. Stir in butter and vanilla, return to microwave and cook at high 1 1/2-2 minutes. The mixture should be caramel colored. Add the baking soda. Stir quickly until the mix is light and foamy. Pour it onto the cookie sheet and spread it out quickly. Cool 30 minutes, then break it up into pieces.
