This recipe is has a nice cheesy taste and is not too heavy.
Ingredients:
- 1 (8 ounce) package whole wheat linguini pasta
- 1 tablespoon olive oil
- 1/2 pound chicken, cut into small pieces
- 1/2 pound fresh mushrooms, sliced
- 1/2 pound fresh broccoli
- 6 tablespoons butter
- 2 cloves garlic, minced
- 1 (3 ounce) package cream cheese
- 2 tablespoons chopped fresh parsley
- 3/4 teaspoon dried basil
- 1/2 cup boiling water
- 1/4 white wine
Directions:
In a medium sauce pan, melt butter with the minced garlic. Stir in the cream cheese, breaking it up with a spoon as it melts. Stir in the parsley and basil. Simmer for 5 minutes. Mix in boiling water until sauce is smooth and just starts to thicken. Stir in the white wine.While your sauce is cooking, heat 2 tablespoons olive in a large skillet over medium-high heat. Add chicken, mushrooms and broccoli; cook and stir until tender. Toss cooked pasta into the skillet. Add the sauce and stir. It's ready to serve.

Those mushrooms look really great! I'd love to know what brand of whole wheat pasta you use - some are good, some not-so-much...
Also, your blog has inspired me to create printable recipes from a blogspot site.... so far, so good!
Thank you Tracy. I use Gia Russa 100% Whole Wheat pasta for the most part. In a pinch I have used other brands, but I really like this brand best.
