SALMON PENNE WITH VODKA SAUCE

Pasta is such a great comfort food, but recipe gives a whole new meaning to comfort with its decadence.

Ingredients:
  • 1/2 cup butter
  • 1 onion, diced
  • 1 cup vodka
  • 2 (28 ounce) cans crushed tomatoes
  • 2 teaspoons oregano
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons sugar
  • 1 pint heavy cream
  • 1 pound of skinless salmon fillets
  • 12 ounces of whole wheat penne pasta
Directions:

Saute' onions in butter until transparent and slightly browned.  Add the vodka to the onion mixture and simmer for ten minutes.  Add the tomatoes, oregano, cayenne pepper and sugar and simmer for 30 minutes.  Add the cream and simmer for an additional 30 minutes. 

Cube the salmon fillets.  Saute' in a separate pan with a small amount of butter until cooked through.  I often add some fresh sauteed veggies to the pan and incorporate those into my dish as well. 

Prepare your pasta according to the directions on the box. 

Once your sauce is complete, toss with the salmon, noodles and sauce together.  Enjoy!!!
