This a much healthier version of Grandma's fried chicken that we are all so crazy about.

  • 2 cups crushed corn flakes cereal
  • 1 egg
  • 1 cup milk
  • 1 cup flour
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • dash cayenne pepper
  • 4 bone-in skinless chicken breasts, rinsed and dried
  • 3 tbsp. butter, melted

In small mixing bowl, beat egg and milk slightly. Add flour, salt, pepper and cayenne. Mix until smooth. Dip chicken in batter. Coat with crushed corn flakes. Place with bone side down in a greased shallow baking pan, uncovered. Drizzle with melted butter. Bake at 350 degrees for approximately 1 hour or until tender.
